Spicy spinach
A healthy and nutritious spinach recipe.
Preparation Time: 15 mins
Cooking Time: 10 mins
Serves: 4
Ingredients
- 1 lb. spinach, washed, peeled, cut into small pieces
- 3 dried red chillies
- � tsp mustard seeds
- � tsp cumin seeds
- 1 tsp whole Szechwan pepper
- 1 tbsp garlic, minced
- 1 tbsp ginger, minced
- � tspn turmeric
- � tsp freshly ground pepper
- 3 tbsps mustard oil
- 2 tbsps fresh coriander, finely chopped
- Salt to taste
Directions
- In a non-stick pan heat three tbsps of mustard oil.
- Splitter whole mustard seeds and cumin seeds until they turn dark.
- Fry dried red chillies for 15 sec. till they turn dark.
- Add garlic, ginger, ground pepper, and turmeric; fry for a minute on low heat.
- Add mustard greens to the spice-mixture, and stir-fry for about two minutes.
- Put some salt.
- Increase the heat to high; cook the mustard greens until they wilt and the excess liquid has evaporated.
- Do not overcook the greens.
- Adjust seasoning with salt and pepper.
- Garnish with chopped coriander.
- Serve with rice.
